Homemade Sweet Cream Butter
(made from cow's cream)
Things you will need:
Food processor (if you don't have one you can use a blender, it will just take longer)
cheese cloth
Ingredients:
2 cups Heavy Cream (I used non-pasteurized cow cream)
1/2 to 3/4 teaspoon salt
Directions:
Put cream and salt (do not add salt if you want to save buttermilk for other recipes) in food processor that has a steel blade attachment. Whip cream until butter separates from the buttermilk, which will collect on the bottom of the food processor. This will take approx. 4-7 minutes. When the mixture looks very "slushy", stop the machine and the butter should be separated from the buttermilk. Pour the mixture in the cheese cloth and squeeze slightly until most of the liquid is out.
Put in a glass dish, pat off any remaining liquid off of the top of the butter. You can use it right away or cover it with plastic wrap and put it in the refrigerator.
